Sorry, just beginning the research for our first cruise, so I have a lot of questions.

My daughter has Type 1 diabetes.  She doesnt require a special diet, we just need to know the carb counts of the food she is eating and eat somewhat on a schedule.  I have noticed on some of the reservation sites Ive looked at it asks if the person is diabetic.  If I click yes for her, what will they do that they wouldnt do for a non-diabetic?  Will they provide us a sharps container?  My concern is that if I click yes, they will try to do everything sugar free which we actually try to avoid.

I know that they will provide you with a sharps container as one of our friends who travelled with our group once needed one.  This was on RCCL and we had to contact a particular dept to arrange it.  When I called the regular 800# and told them our request they gave me the number of special services (I think that was the name of the dept) to call so I'm sure it will work the same when you call them. 

With regards to the menu, I'm sorry I don't remember how that worked although I do know they didn't create a specific menu for him.  He still chose what he wanted.

If you go to each cruise line's forum here on CTT, there is a direct link to each of the line's Web sites. Most, if not all of them, provide for special diets. Here is what I found on just three of them:

Carnival:
Diabetes/ Medicine storage
Refrigerators are available in some staterooms for insulin storage. Ships that are equipped with refrigerators in the stateroom are the Spirit, Pride, Conquest, Legend, Valor, Liberty, Glory and the Miracle Alternatively insulin can be stored with room service or at the Pursers desk; both are available 24 hours a day. Sugar free substitute Deserts are available onboard.

Dietary Needs
Carnival Cruise Lines can provide our guests with the following special dietary needs: Vegetarian, Low-Cholesterol, Low-Fat, Low-Carbohydrates, Low-Sugar, Gluten Free and Bland.  Kosher meals, Baby foods and formulas are not available onboard. If you have food allergies, please advise your dining staff once onboard, or contact a Guest Access Services Representative to discuss your requirements.

Disney:
Do you offer meals for special dietary needs?

Low-sodium meals, kosher meals and certain other special diet-restricted meals are available. Please detail any dietary requests at the time of booking so that we can accommodate your dining requirements. For our Land & Sea Guests, certain dietary needs may be accommodated at most full-service restaurants at the Walt Disney World® Resort, if requested 24 hours in advance.

Can coolers and/or food items be brought onboard?

Coolers are not permitted except for those needed for medications, baby food or items related to dietary constraints. Items must be pre-packaged, unopened and cannot require any food prep from the kitchen. Coolers filled with personal items (e.g. soda, chips, candy, etc.) may not be brought onboard. Homemade items or pre-cooked items purchased on the way to the ship will not be allowed to be brought aboard. Also, open bags or containers of snack items should not be brought aboard. All items will need to be stored in the stateroom; the ship's storage and/or refrigeration are not available to use.

Royal Caribbean:
Q:  What type of special meals does Royal Caribbean offer?
 
A:  We make every effort to accommodate our guests' dietary requirements whenever possible. We can accommodate special needs such as:  Food allergies
 Gluten-free
 Vegetarian (except for vegan/macrobiotic)
 Low-fat
 Low-sodium

Lactose-free/soy milk, Ensure, and kosher meals are no extra charge. All you have to do is notify us at least 45 days prior to sailing. Just send an e-mail that includes the guests' names, reservation ID number, ship's name and voyage date to the relevant address below:

Food allergies - foodallergies@rccl.com

Kosher meals - kosher@rccl.com
(Kosher for Passover meal requests MUST be received 60 days in advance in order to be accommodated.)

Indian-style vegetarian meals - Indianvegetarian@rccl.com

Fax requests may be sent to 305-539-6018 Attn: Special Meals Request

E-mails will receive an automated response. Faxed requests will also receive a response provided the guest provides an email address. We kindly ask that guests do not call Royal Caribbean International suppliers with specific questions.

Special meal requests that are faxed or e-mailed less than 45 days of sailing are dependent on the ship's product availability. We will try to accommodate to the best of our ability.

Please note:   Baby food and infant formula are not provided on board.
Guests may not bring on board any food items other than baby food and/or dry, nonperishable snack items (cookies, crackers, chips, energy bars, etc).

I think ML is correct.  If you need the early dinimg at dinner, make sure your TA requests it when they make the reservation. I would assume you want the early dinner seating? For breakfast and lunch, it is open seating, so you can eat whenever you want to.
As regards to the menu, I would think she could order right off the regular menu.

I have a friend who cruises NCL exclusively because they have been so accomodating of her special medical needs. Among other things, they provide her with a sharps container. She also had a staff member -- from the infirmary, I think? -- check in with her several times to make sure she had everything she needed.

I'd definately talk to the appropriate medical office for whichever cruiseline you choose.  They won't make you eat certain foods - you can order whatever you want at whatever venue - but you'll be able to get info about the food easier, and you'll get that sharps container if you need it.

Also, speak to the Maitre'd once you get on board, and if you're in traditional dining, speak to your waiter.

I've heard that Princess does fairly well with "normal" issues.  Something a little rarer like celiac disease or vegan dining is going to be harder, but diabetics should have no problem on ANY line, IMO.
