...so on Carnival I have this wired. First time on Princess. We want to get on board as early as posible to explore ship, eat lunch etc. What time should we arrive at the terminal?
We will also have some old folks who probably cannot stand, if we do have a wait, will they be able to sit?
After boarding, can we access our rooms immediately, on Carnival they have started closing the fire doors and not letting you go to rooms till 1:30?
What lunch options are there after boarding - do they have a dining room open?
How does muster work on Princess? Any special tips for my parents, they hated Carnival muster... Do the ships typically sail on time?

I wish I could be of more help, but it's been 4-5 years since I sailed on Princess and things may have changed.
The last time I was on Princess, the Muster drill were held in the showroom/theatre. You did not go outside on deck. At least there is a place to sit in the theatre & it was cool.
* In my experiece, the Princess ships DID leave on time.
* THey will either have the dining room, or the Lido cafe up by the pool open for lunch.
* I would guess that there are places to sit in the terminal building, when waiting to check in.

I don't remember it well, since it's been almost a year (tomorrow, in fact!) since I was on the Crown. I do remember there was a long snaking line to stand in to check in, and it was as cold as the dickens in the cruise terminal. We were definitely not among the first to arrive, so I can't answer questions about early arrival, lunch and rooms. Our luggage arrived at our cabins nearly as soon as we did.
Traffic patterns at Red Hook -- unless they have changed in the last year -- are nightmarish. The surrounding neighborhood is not set up to handle that volume of traffic. Our driver was late picking us up due to an accident in the tunnel. It seemed like traffic in the terminal area started to ease up significantly around 1-2 p.m. But while newcomers were arriving at the same time as passengers were departing, it was hellish.

It is also about a year since we sailed on the Crown Princess out of the Red Hook terminal. My wife is in a wheelchair and I sought help in getting her pushed on board. "Not my job!" was the answer I got from all of the port people. I found some Princess people and asked for assistance. They wandered off to get help, never to return.
It was our first cruise on Princess. Putting together the lovely embarkation and the incredibly bad disembarkation (another story, even worse), it will be our last Princess cruise. The cruise itself was generally excellent, but Princess clearly thinks their customer service stops at the entrance hatch, coming in and going out.
Unless the passage of twelve months has wrought remarkable changes in the Red Hook terminal, I would never, never consider trying it again.

Geez, that's terrible. I wonder if that happens with Princess at other ports, or is just a Red Hook disservice?
For the last 3 years, my mother is in a wheelchair. We have had such good service with RCCL (out of Miami). They take care of her from the minute she gets out of the bus and takes her to her cabin on embarkation day.
On disembarkation day, they wheel her off the ship and waits for her to get her luggage, and then wheels her thru Customs and to the buses. She has been very happy with the RCCL service for handicapped folks.
