They have what is called Rotational Dining.  You change restaurants every night among the three main options.  Animator's Palate is a great experience with music, changing colors, the walls coming to life.  It really is fun.  Your waitstaff also makes the "rounds" with you so there is no getting used to a new server.  Disney knows what they are doing.

The rotational dining is wonderful.  Disney's food is very good.  I love Palo and I love the price they charge for eating there.  Very reasonable.  The Chocolate Souffle puts the Chocolate Melting Cake to shame.

I agree with you.  On our last cruise on Disney we booked for my birthday because I wanted the Chocolate Souffle from Palo.  Yes DH scored big by taking me on a cruise just for the dessert.  We were able to eat there twice on that cruise.  Once for my dessert for my birthday and they refused to charge.  They would not even take a tip.  Very outstanding.  I have never had such good service anywhere else not even on land. 

I guess all this talk about Disney has hit me hard because what sleep I got last night (really bad storm with tornados) I dreamed I was on a Disney Cruise.

We've had pretty good service on most of our cruises, but this sounds exceptionally good. I have to wonder what has happened to the level of customer service these days, not just on cruises. It really seems to have suffered. That's why I go in not expecting the best and can be really happy when I get the best.

Sounds like you have the right attitude. ;)
If not for the PITA sommelier at Nick and Nora's on Carnival Miracle, my experience there would be a close second to Palo.  Unfortunately, she chose to try to upsell me wine over contributing to an otherwise great experience.

I agree the level of customer service at any place has gone down.  I hate to go to the grocery store and see some kid chopping bubble gum and flirting with the bag boy as she checks my groceries out.  Or when you are totally ignored in a store. 

When we cruised Disney they were truly awesome.  The food was outstanding.  Service was a step above.  I hope nothing has changed. 

My two favorite things about Disney Cruises are Palo and Castaway Cay.
